Recipe: Buddha Bowl

Take advantage of having to prepare food at home these days. Here’s an easy, healthy, and tasty mash-up that will hit the spot and leave you feeling good about chowing down!

  • Baby Spinach leaves (drizzled w/ avocado oil)
  • Basmati Rice
  • Black Beans (Trader Joe’s Cuban style are my favorite)
  • Diced, raw bell pepper
  • 1/2 baked sweet potato
  • 1/2 avocado
  • Optional toppings – TJ’s Shredded Cabbage, Sir Kensington’s Chipotle “mayo”, organic Sriracha, salt, pepper and a little more Avocado Oil
